… actualy there’s a few favourites. We have so many lovely places to choose from here in the Lake District.
For a lovely local lunch with friends, I really enjoy The Lakes Distillery Bistro at Bassenthwaite It’s delicious food is presented so beautifully which is a huge part of the whole experience. I enjoy their fishcakes with buttered spinach and parsley cream. The flavour is amazing and the combination with the spinach and cream makes this a lovely meal in itself, I dont always manage the chips!
The most memorable dining experience was The Kitchin at Leith, Edinburgh. I went with friends for a special birthday lunch. I have never met such pleasant, polite and warm staff anywhere. I won’t spoil it for you in case you decide to go, but there were some pleasant surprises. What shone through was Tom Kitchin ethos of ‘Field to plate’; especially my main dish of Partridge – breast meat, pastilla stuffed with everything else from the bird. Dining at The Kitchin is a must if you love great food. Oh, I got to meet Tom too busy at work in the kitchen, who kindly took a few minutes out and wished me a Happy Birthday!
If I’m baking at home I love a Bakewell tart. I made one recently using Hawkshead Relish Raspberry and Vanilla Jam, and placed a few fresh raspberries in there too before adding the lovely moist almond sponge topped with flaked almonds that give a lovely crunchy texture to the top, and the delicous crisp sweet pastry case… deeelicious!
I love stopping off for tea and cake when out catching up with family and friends. It has to be Lemon Meringue Pie! Piled so high with meringue is a must. Crispy pastry shell, a lovely tart lemon custard filling, topped with lots of crisp meringue with a gooey middle. Definitely worth try!
It has to be Thornby Moor Dairy Stumpy, a delicous Goats cheese. Light yet full of flavour.
I like to serve this as a starter, delicious served as it is, on a bed of crispy leaves, some sweet yet sharp apple chutney and a drizzle of balsamic glaze.
Chicken Chausseur. I love the simplicity of this dish, and the delicate flavour of Tarragon with the white wine and tomatoes, then the smokey lardons with the chicken – its all very ‘comfort food’ I just can’t get enough of it. Served on some creamy mash potato with some griddled buttered green beans. I’m getting hungry writing this!
Other than a nice chilled Pinot Grigio with friends, you can’t beat a good cup of tea! Twinings English Breakfast made a pot and allowed to brew (never stirred in the pot) is a great start to the day with breakfast.
